Cinnamon Rolls

I got a request for the cinnamon roll recipe. By the way, one comment made at the class I taught was that the cinnamon roll is just a vehicle for the frosting... Yeah, I gotta agree. This is a really good frosting recipe too.

Cinnamon Rolls
By Kassi Barney

3 1/4 cups warm water
1 cup powdered milk
1/4 cup sugar
2 tsp. Salt
2 Tbl. Yeast
1/4 cup butter or margarine
2 eggs (room temp.)
8-9 cups flour

Put milk, water, sugar, salt, margarine or butter, eggs and yeast in a bowl. Add half of flour. Mix for 1 min. on high speed. Let sit for 5 minutes. Add remaining flour. Mix 3-5 min. or knead by hand for 10 minutes. Let rise 1 hour

Split dough in half. Roll out into two rectangles. Spread 1/4 cup butter on each rectangle. Spread 1 cup brown sugar on each rectangle. Sprinkle cinnamon on top of brown sugar. Roll into cinnamon rolls. Cut the log 2 inches apart. Place in pan. Let raise 30-45 minutes.

Bake at 375 for 15-20 minutes.

Cream cheese frosting:

1/2 cup butter, softened
3 oz. cream cheese, softened
2 cups powdered sugar
1 tsp. vanilla

mix with beaters until it comes together and get creamy. Don't add milk, or extra liquid, just keep mixing until it gets there.

I agree-I don't like the cinnamon roll unless it's coated with frosting.
